  1. 1 pound brioche + 2 oz, or Croissants, cut into 1u201d cubes
  2. 3 eggs
  3. 1 1/2 cups milk
  4. 1/2 teaspoon vanilla extract
  5. 1/2 teaspoon cinnamon
  6. 1/2 teaspoon nutmeg
  7. 1/2 cup granulated sugar
  8. 1/4 cup Sugar in the Raw
  9. 1 tablespoon butter
  10. 2 tablespoons Sugar in the Raw
  11. 1 cup dark brown sugar
  12. 1/2 cup butter
  13. 1/4 cup half and half
  14. 1 teaspoon vanilla extract
  15. 1/2 teaspoon kosher salt
  16. 1/4 cup bacon fat
  17. 1 1/2 cups caramel corn
  18. 1/4 cup bacon crumbles cooked

  1. Cut bread and let sit out overnight to dry
  2. In a bowl whisk together all of the pudding ingredients (3 eggs, 1 1/2 cups milk, 1/2 tsp. vanilla extract, 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, 1/2 cup granulated sugar, 1/4 Sugar in the Raw) except the butter and fold in dry bread, let sit for 15 min
  3. Prepare chimney with charcoal, or pre-heat half of the grill if doing gas, dump out coals on one side for indirect heating method, replace grill grate.
  4. Rub inside of cast iron pan with butter and pour in pudding mixture. Sprinkle the top with the remaining 2 Tbsp. sugar in the raw, cover and place over HOT side of coals for 60 seconds.
  5. Move to cold side, cover grill and let bake.
  6. Turn the pan 90 degrees every 10 minute for even baking.
  7. Will take about 35-45 minutes to puff up and be golden brown on the sides.
  8. Remove from heat, remove lid, and let sit for 30 minutes
  9. CARAMEL SAUCE: In sauce pot whisk together all ingredients (1 cup dark brown sugar, 1/2 cup butter, 1/4 cup half and half, 1 tsp. vanilla extract, 1/2 tsp. kosher salt, 1/4 cup bacon fat) , bring to a boil and remove from heat, serve warm with toppings 1 1/2 cup caramel corn and 1/4 cup cooked bacon crumbles.
