  1. 250g good-quality dark cooking chocolate (like Plaistowe Cooking Chocolate), chopped

  3. 30mls (1 1/2 tablespoons) orange liqueur (like Grand Marnier or Cointreau)
  4. 1 tablespoon caster sugar
  5. 250mls (1 cup) thickened cream

  1. Place chocolate in a medium heat-resistant bowl over a saucepan of simmering water, stirring occasionally, or until melted and smooth (see microwave tip).
  2. Remove the bowl from heat and use a wooden spoon to stir in the egg yolks and orange liqueur.
  3. Use electric beaters or a hand whisk to whisk the egg whites in a clean, dry medium bowl until soft peaks form. Add sugar and whisk until thick and glossy. Use a large metal spoon to fold a spoonful of egg whites into chocolate mixture, then fold in remaining egg whites until evenly combined.

  5. Spoon mousse into eight 185ml (3/4-cup) capacity individual serving dishes or a 1.5-litre (6-cup) capacity serving dish. Cover with plastic wrap and place in the fridge for at least 2 hours or until well chilled and firm.
